      Agrologist I conserve an interest for the apple varieties as I worked in orchard as part of me university training.

      Medium size, greenish-yellow color with reddish blushing. Very firm but relatively juicy. Taste was a very interesting balance of tart and sweet--neither tart nor sweet but a very powerful, vivid taste. I sampled 16 heirloom varieties and Ralls was my favorite of the day (to preface that, I prefer firm, tart apples with bold flavor)
