Lodi is one of the finest-grained fruits for apple sauce, very smooth, melts nicely in pies and darn delicious off the tree as its my first apple of the new season-tart of course though when halfway yellow it's perfectly pleasant and still breaking-crisp which it holds for a week in the fridge with any mild apple flavor leaving as they're quite volatile like most earlies.
